Na sua grande maioria os vinhedos cultivados na zona são das uvas: Corvina, Corvinone, Rondinella e Molinara que entram na composição dos seus afamados vinhos em proporção variada. Nesta região se produzem os famosos &lt;b&gt;Valpolicella&lt;/b&gt;, &lt;b&gt;Amarone della &lt;/b&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-size: medium; font-family: 'trebuchet ms'; "&gt;&lt;b&gt;Valpolicella&lt;/b&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="font-size: medium; font-family: 'trebuchet ms'; text-align: left; "&gt; &lt;/span&gt;&lt;span class="Apple-style-span" style="font-size: medium; font-family: 'trebuchet ms'; "&gt;e o &lt;b&gt;Recioto della Valpolicella&lt;/b&gt;. O Amarone e o Recioto são vinhos produzidos com uvas passas em um método conhecido desde a antiguidade. A zona produtora mais antiga compreende os comuni di: Negrar, Fumane, Marano, S. Ambrogio e San Pietro in Cariano. Outros 15 comuni da Província de Verona também produzem as uvas para a produção dos dois famos vinhos. O vinho Valpolicella é adaptado para ser servido com carnes brancas e queijos. O Valpolicella Superiore, com animais silvestres e carnes assadas. O solo e o clima da zona central do país adotaram-na como se ela tivesse nascido ali, uma casta de cor vermelho púrpura, aromas de ameixas pretas, groselhas maduras e taninos suaves. Referimo-nos a Carmenére.&lt;/span&gt;&lt;span class="Apple-style-span" style="font-family: Georgia, Utopia, 'Palatino Linotype', Palatino, serif; font-size: 15px; line-height: 23px; "&gt;&lt;span class="Apple-style-span"&gt;&lt;div style="text-align: justify; "&gt;&lt;/div&gt;&lt;div style="text-align: justify; "&gt;Originária de Bordeaux, foi amplamente cultivada no início do século XIX nas regiões do Médoc e de Graves. Em 1860, um desastre atingiu os vinhedos franceses, pois foram atacados pela filoxera, um inseto minúsculo que afeta a raiz e as folhas sugando a seiva das videiras.&lt;/div&gt;&lt;div style="text-align: justify; "&gt;&lt;/div&gt;&lt;div style="text-align: justify; "&gt;Apenas alguns países puderam se salvar desta praga, entre eles se destacam o Chile, Chipre e algumas partes de Portugal. Depois deste episódio, os vinhedos franceses para sobreviver e conviver com esta praga, tiveram de enxertar suas videiras em raízes de vides americanas, não afetadas pela filoxera. Como a Carmenére não deu bons resultados na enxertia, ela foi lentamente desaparecendo do território francês e do resto do mundo. Naquele momento, a Merlot tomou o seu lugar e começou a dar ótimos resultados, principalmente em Bordeaux.&lt;/div&gt;&lt;div style="text-align: justify; "&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify; "&gt;Os vinhedos chilenos desfrutam de uma grande vantagem em comparação com o resto do mundo, uma vez que têm barreiras geográficas que os isolam de pragas e doenças. Ao norte, fica o Deserto de Atacama; no leste, estão os Andes; ao sul, camadas de gelo da Patagônia e suas geleiras; e finalmente a oeste, estão o Oceano Pacífico e a Cordilheira da Costa.&lt;/div&gt;&lt;div style="text-align: justify; "&gt;As uvas Carmenère foram introduzidas no Chile junto com outras variedades bordalesas em meados do século XIX, quando o país começou a substituir as antigas vinhas espanholas pelas nobres cepas francesas, com destaque para a cepa "Merlot", que ao longo dos anos sempre amadurecia tardiamente.&lt;/div&gt;&lt;div style="text-align: justify; "&gt;Durante a década de 1980, todos achavam que a Merlot tinha se adaptado ao solo nacional, mas em 1994, o ampelógrafo francês Jean-Michel Boursiquot disse que o "Merlot" chileno não era nada mais nada menos que "Carmenère". Finalmente, com uma sofisticada análise de DNA, Boursiquot confirmou sua importante revelação. solo da qualche migliaio di anni però si è cominciato a produrre vino. Hanno incominciato i sumeri, poi gli egiziani e greci e quindi gli etruschi. Oggi l'Italia è il primo paese vitivinicolo del mondo e l'Europa detiene l'80% della produzione mondiale. Il Sangiovese&lt;span lang="it"&gt; è&lt;/span&gt; il vitigno più diffuso in Italia, che copre oltre il 10% delle superfici vitate ad uva da vino. Il sangiovese insieme a Catarratto Bianco siciliano, Trebbiano Toscano, Montepulciano ed il Barbera ricoprono da soli oltre il 30% delle coltivazioni. In totale in Italia ci sono ben 355 vitigni autoctoni che rappresentando un re&lt;span lang="it"&gt;c&lt;/span&gt;ord unico al mondo. Sono in crescita di superficie vitata i vitigni internazionali per via della maggiore apertura verso i mercati internazionali nonostante la progressiva riscoperta delle qualità autoctone.&lt;br lang="it"&gt;&lt;b&gt;Abbinamento per tradizione&lt;/b&gt; - &lt;/span&gt;Un piatto tipicamente regionale o locale va generalmente abbinato ad uno dei vini della stessa zona per creare un'affinità di profumi e di sapori&lt;/p&gt;&lt;p align="justify"&gt;&lt;b&gt;&lt;span lang="it"&gt;Abbinamento per contrapposizione e concordanza di sapori -L&lt;/span&gt;&lt;/b&gt;'abbinamento più piacevole si ha quando il vino esprime caratteristiche opposte a quelle del cibo. Quando un piatto é particolarmente grasso (lo zampone ad esempio) sarà bene abbinarlo ad un vino &lt;span lang="it"&gt;rosso fresco (inteso come acidità del vino)&lt;/span&gt;,&lt;span lang="it"&gt;sapido&lt;/span&gt; che contrastando l'untuosità del cibo ripulisca la bocca e alleggerisca la pesantezza del piatto.&lt;br /&gt;&lt;br /&gt;Il sapore dolce di un cibo tende a prevalere, soprattutto nel caso dei dessert. Poiché non esistono vini secchi che possano reggere il confronto con il carattere dolce di un dessert é decisamente meglio assecondare il contenuto zuccherino del piatto e abbinare un vino dolce&lt;span lang="it"&gt; (concordanza piatto dolce vino dolce)&lt;/span&gt;.&lt;/p&gt;&lt;p align="justify"&gt;Tendenzialmente il corpo del vino deve essere proporzionale alla struttura del piatto e quindi un piatto piuttosto complesso che necessita di una preparazione elaborata dovuta al tipo di cottura, alla quantità o preziosità degli ingredienti, va abbinato ad un vino altrettanto complesso e robusto, di buon invecchiamento, che possa cioè non essere sovrastato dalla personalità del cibo. Un piatto leggero e delicato di conseguenza non dovrà essere " coperto " da vini troppo importanti o dotati di una pronunciata componente aromatica, ma si sposerà ad un vino schietto, leggero e giovane.&lt;/p&gt;&lt;p align="justify"&gt;Ogni piatto dovrebbe essere accompagnato idealmente da un vino diverso, e quindi al variare delle portate andrebbe variato il vino, perché ogni piatto presenta proprie caratteristiche gustative.&lt;/p&gt;&lt;p align="justify"&gt;&lt;span lang="it"&gt;&lt;b&gt;Abbinamento legato alle stagioni &lt;/b&gt;- Si basa sul principio logico che in estate difficilmente prepareremo piatti tipicamente invernali e viceversa.&lt;/span&gt;&lt;/p&gt;&lt;p align="justify"&gt;&lt;span lang="it"&gt;In inverno avremo piatti grassi ed in estate piatti leggeri, da qui si capisce che in estate non berremo un Barolo perchè adatto a piatti complessi !&lt;/span&gt;&lt;/p&gt;&lt;/span&gt;&lt;span style="font-size: medium; "&gt;&lt;br uvas, possivelmente descendente da &lt;strong&gt;Pulcinum&lt;/strong&gt;, a uva usada pelo antigos romanos na fabricação do vinho, nativa da Região do Vêneto, especialmente entre os municípios de Conegliano e Valdobbiadene. Hoje além dessa zona com aproximadamente 13 municípios, outra área tem a permissão de usar o nome Prosecco na confecção dos espumantes: é a região de Montello e Colli Asolani que reúne produtores de Asolo e de mais 16 municípios ao seu redor. Devemos saber que nem todo Prosecco é espumante, sendo este conhecido como Prosecco tranquilo. Os espumantes são confeccionados por dois métodos clássicos: &lt;strong&gt;Champenoise&lt;/strong&gt;, quando a segunda fermentação ocorre na própria garrafa ou o método &lt;strong&gt;Charmat&lt;/strong&gt;, quando a segunda fermentação ocorre em um ambiente fechado antes do engarrafamento.&lt;/div&gt;&lt;div align="justify"&gt;O espumante Prosecco já é conhecido de longa data, aparecendo na literatura desde 1710. Foi o enólogo Antonio Carpenè que aperfeiçoou o método de produção com técnicas trazidas da região da Champagne, França.&lt;/div&gt;&lt;div align="justify"&gt;A uva Prosecco morfológicamente tem um cacho alongado de porte médio e de forma piramidal, com polpa consistente e suco abundante. Apresenta uma perfume agradável sem ser muito aromática. Ela é considerada uma uva de colheita tardia, que deve amadurecer adequadamente. A safra se inicia depois de 20 de setembro indo até o final de outubro. As uva Prosecco não produz vinhos muito alcoólicos, girando por volta de 11% por volume. Na sua vinificação é usada a tecnologia à frio, onde os sólidos se aglutinam naturalmente e são retirados por decantação evitando assim a filtração e consequente desaparecimento de matérias corantes.&lt;/div&gt;&lt;div align="justify"&gt;As quatro categorias de Prosecco:&lt;br /&gt;&lt;/div&gt;&lt;div align="justify"&gt;1- &lt;strong&gt;Branco tranquilo ou Prosecco di Conegliano-Valdobbiadene&lt;/strong&gt; - vinho para acompanhar entradas e pratos à base de peixe - além da uva prosecco o corte pode levar até 10% de Verdiso, ou ainda Pinot Bianco ou Pinot Grigio em proporção não superior à 15%. &lt;/div&gt;&lt;div align="justify"&gt;&lt;/div&gt;&lt;div align="justify"&gt;2- &lt;strong&gt;Branco Frizzante&lt;/strong&gt; se denomina &lt;strong&gt;Prosecco di Conegliano-Valdobbiadene Frizzante&lt;/strong&gt; com as mesmas proporções de corte do anterior&lt;/div&gt;&lt;div align="justify"&gt;&lt;/div&gt;&lt;div align="justify"&gt;3- &lt;strong&gt;Prosecco di Conegliano-Valdobbiadene Spumante&lt;/strong&gt; - o corte pode levar até 25% de uva Pinot Bianco ou Grigio e a sua graduação alcoólica ser superior a 11%. Quanto ao sabor este Spumante pode ser seco, meio doce (amabile) ou doce. O tipo seco tem duas versões: uma o Prosecco Spumante Extra Dry, quando a fermentação é interrompida ainda com uma pequena parcela de açúcar residual em torno de 15 a 25g por litro de vinho. O outro tipo de Spumante Seco é denominado de Prosecco Brut, mais seco e com porcentagem mais baixa de açúcar residual, em torno de 5 a 10g por litro de vinho.&lt;/div&gt;&lt;div align="justify"&gt;&lt;/div&gt;&lt;div align="justify"&gt;3- &lt;strong&gt;Prosecco di Conegliano-Valdobbiadene Superiore di Cartizze&lt;/strong&gt; - elaborado com uvas provenientes de uma só localidade chamada San Pietro di Barbozza, no município de Valdobbiadene.
